							<description>&amp;nbsp;一向愛吃Mrs. Fields曲奇，喜歡其煙韌鬆軟的口感，百吃不厭。在外國網站找到Mrs. Fields朱古力曲奇食譜，決定整來試試。材料：&amp;nbsp;牛油227克砂糖100克黃糖300克雞蛋(稍為打散)2隻雲呢拿油2.5茶匙低筋麵粉360克鹽3/4茶匙泡打粉1茶匙梳打粉1茶匙Hershey&amp;rsquo;s Semisweet朱古力粒340克Hershey&amp;rsquo;s 無糖朱古力磚(磨碎)50克榛子果仁(切碎)180克製法：1. 預熱焗爐180度。2. 牛油於室溫放軟1.5至2小時。3. 用電動打蛋器將牛油、砂糖、黃糖和雲呢拿油打至滑身，然後分幾次加入蛋液，每次加入都要打勻。&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;4. 用膠刮將麵粉、鹽、泡打粉和梳打粉拌勻。5. 將(3)和(4)拌勻。&amp;nbsp;&amp;nbsp;6. 拌入朱古力粒、無糖碎朱古力和碎榛子果仁。&amp;nbsp;&amp;nbsp;7. 將麵團放入雪櫃約半小時。&amp;nbsp;8. 把約1湯匙麵團，隔約4厘米放在已鋪上牛油紙的焗盆上，稍壓平。&amp;nbsp;9. 放入已預熱至180度的焗爐，焗約15分鐘，稍為冷卻，然後移到鋼架上放涼。&amp;nbsp;心得分享/感想：l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 酌量減少了糖的份量，原來食譜的砂糖份量是110克，黃糖份量是330克，個人覺得仍然稍甜，建議再減30至50克。&amp;nbsp;l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 牛油於室溫放軟，打發起來較容易。l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 將麵團放入雪櫃雪30分鐘，搓起來較容易。&amp;nbsp;l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 分了3盤來焗，原來食譜建議焗約10分鐘，但第一盤焗了10分鐘後發現還未熟，最後焗了23分鐘，可能因為焗得太久，顏色較深。第二盤和第三盤分別焗了15分鐘，賣相較佳。第一盤第二盤第二盤&amp;nbsp;l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 味道方面，有同事說跟Mrs. Fields的有8成半相似，口感就有8成相似。個人覺得仍然不夠Mrs. Fields的煙韌，可能與麵粉有關，原來食譜是用all-purpose flour(plain flour)，即中筋粉(超級市場售賣的普通麵粉)，蛋白質含量較低筋粉高，筋度較強。   </description>

							<description>&amp;nbsp;前陣子因為事忙，已有3個月沒有新作了，現在重出江湖，希望大家繼續捧場吧。去酒樓飲茶時總會叫中式糕點，如紅豆糕、馬豆糕、桂花糕等，但就未試過自己整。今次是第一次整中式甜品，很多謝舊同事提供食譜，這款糕做法簡單，成本便宜，是夏天消暑佳品。材料：&amp;nbsp;紅豆75克花奶96克砂糖156克椰漿240毫升粟粉102克紅豆水750毫升製法：1. 將紅豆洗淨，加水喉水浸一晚。2. 開中火，用大窩水喉水將紅豆煮約35-45分鐘至爆口，熄火焗半小時，隔水備用(即紅豆水)。3. 將椰漿、花奶和粟粉拌勻。4. 將紅豆水煮沸，加入砂糖煮溶，然後轉細火，慢慢加入已開勻的粟粉漿，一邊倒入粉漿，一邊在煲內攪動，要向一個方向攪，攪到漿粉轉「杰」時，轉中火，要不停攪動，以免黐底，攪至滾起，像起泡一樣，最後再加紅豆攪勻，然後倒入用凍水沖過的蛋糕模，冷卻後放入雪櫃，冷藏至凝固即可。放入雪櫃前雪過夜後心得分享/感想：l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 將紅豆浸過夜，紅豆較易淋。&amp;nbsp;l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 椰漿、花奶和粟粉一定要拌至沒有粉粒。l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 向同一方向攪粉漿，做出來的紅豆糕會較滑。&amp;nbsp;l&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 糕身夠軟滑，甜度適中，不過椰汁味略嫌不夠，可加多一點。&amp;nbsp; &amp;nbsp;&amp;nbsp;  </description>
